How to season a cast iron skillet
Seasoning a cast iron skillet is very important before using it for the first time, and doing it regularly will help the life of your pan. Seasoning helps with rust as well as making a nice non-stick surface. First off you want to make sure you scrub and dry the pan well, then set your oven to 250 degrees. Use plain canola oil with enough oil to coat the bottom of the pan, and then coat the sides with a paper towel. Any oil will do but canola or vegetable oil is best. You can season the outside of the pan as well if you like. Once you have coated the pan turn the pan upside down on to a sheet of foil or cookie sheet and place it in the oven. The cookie sheet or foil will keep your oven clean and catch any drippings. The heat of the oven will open the pores of the pan so the oil seeps in and will then close back up once you take it out of the oven, leaving a nice non stick surface. You want to leave the pan in the oven for a couple of hours (2-3). Once you take it out of the oven, go ahead and wipe it down to get off the access oil and it is now properly seasoned and ready to cook with.
